Unfortunately, for a lot of restaurants, the number of reservations not honored is quite high-I read a newspaper article that said 50% of the reservations in Atlanta establishments are no-shows. Some places have stopped taking reservations entirely, the downside is that at some popular eateries (such as Houston's) there is a 1-2 hour wait for dinner on a busy Friday or Saturday night. Some go so far as to not do what is a 'call ahead' reservation, (being told there is an X amount of wait time for dinner, then showing up at the time and getting seated right away or within a 10-15 minute time frame after arrival.)
It is a problem on nights like New Year's Eve when it seems that everyone wants to go out for at least dinner and make it home before 12 Midnight ball drop. Some places have taken to reservations guaranteed with a credit card number, so if you are a no-show, you are charged 50% of the fixed price of the meal (which a lot of kitchens will do on a holiday evening.)
